I found out tonight that caramelized onions almost cook themselves. I chopped up a red onion, and cooked it on high heat in a non-stick saucepan, with a wee bit of coconut oil. I watched them carefully so they didn’t burn, but otherwise they were super easy.
Easy, simple, and yet when they were used to top a homely burger patty, it was a game changer.
